Domaine Schlink, crémant Symphonie en Bulles 2016

Cathy Lelu is the head sommelier at Cristal Vins and an ambassador of the Association of European Sommeliers in Luxembourg.

This is a sparkling white wine made with the Chardonnay (55%), Pinot Blanc (30%) and Riesling (15%) grape varieties. Its robe is pale yellow with silvery sparkles and an abundant stream of bubbles. Its nose is powerful, r

eminiscent of well-ripened white-fleshed fruits with notes of spring flowers. An intense, flinty mineral note is also discernible. It is nice and fresh in the mouth with a pleasant, subtle fizz. Golden delicious apple and boiled sweet aromas are released in the mouth. Its finish is mineral. I would serve it as an aperitif accompanied by foie gras or smoked salmon toast. It is also ideal for fruity or chocolate desserts.
