“In my view, great winemakers prove their talent when their wines retain balance and finesse in a hot year like 2018. This Auxerrois, which has been barrel-matured for almost a year, has met the challenge with great aplomb. Golden sparkles can be seen in its beautiful golden yellow robe. The bouquet is pleasant and intense, combining notes of white flowers (honeysuckle, acacia), yellow-fleshed fruit (vine peaches), and a more pastry structure reminiscent of almond paste and nougat. In the mouth, the attack is round with a hint of sweetness that is perfectly balanced by the grape variety’s finesse and elegance, offering a wonderful moment of sweet delight bringing to mind sun-soaked yellow fruit. The finish is long and complex with greater emphasis on the pastry end of the spectrum, while retaining great freshness. It is undeniably a great gastronomic wine that would go perfectly with Label Rouge salmon served as gravlax with a slightly acidic kaffir lime and basil granita.”
